Brendan dining out as Sanctuary Cove’s new Head Chef

Surrounded by green lawns, beautiful architecture and the local wildlife, Brendan McConchie feels right at home in the tranquil setting that is Sanctuary Cove Golf and Country Club.

It’s a refreshing change of atmosphere after 20 years making his name in Sydney’s top kitchens, including Nick’s Seafood Restaurant at Darling Harbour, heritage seafood cafe Doyles on the Beach at Watsons Bay, and Chophouse in the CBD.

It also helps that he’s a keen golfer with a 10 handicap.

Recently appointed Head Chef at world-class Sanctuary Cove Golf and Country Club, Brendan is excited about creating an unforgettable and exclusive culinary experience.

He says Members and their guests at both Lakeview Bar and The Jabiru Restaurant can expect a new, sophisticated menu with a heavy seafood influence.

Brendan appreciates the fine palate of the city’s diners and their desire for healthy options.

“I’ve found that people really want to look after themselves here and live a healthy lifestyle,” he says.

“But they want to do that without sacrificing good food. That’s exactly what I intend to give them.”

Brendan draws his fine dining inspiration from many sources, including those around him, former colleagues and even his two Nannas, who passed on their passion for food.

“I thrive on the experiences of people from all walks of life and I bring this into my work in the kitchen,” he says.

“I’m looking forward to a new challenge and cannot wait to raise my family on the Gold Coast.”
