Australia’s Biggest Morning Tea Savoury Scone recipe

Thank you to Sanctuary Cove Golf and Country Club Member Rob Lane for sending us his mum Penny Lane’s recipe for homemade savoury scones.

Penny Lane’s Famous Savoury Scones Recipe

Kitchen Items

  • Small saucepan,
  • Large mixing bowl,
  • Wooden spoon,
  • Measuring Cup,
  • Muffin pans (mini-24 or regular-12) – well greased with butter
  • Fan-forced oven (200 C) pre-heated

Ingredients

  • 1 cup plain flour
  • 1 cup grated cheddar cheese
  • 1 cup of milk
  • 3 tsp baking powder
  • 1 tsp dried mustard
  • Cayenne pepper (to taste ¼ or ½ tsp)
  • Pinch of salt & pepper
  • 60 grams of butter
  • ½ cup of very finely grated Parmesan cheese

Instructions

Combine dry ingredients (flour, cheddar cheese, baking powder, mustard, cayenne pepper, salt & pepper) in the mixing bowl and mix well.  Add the milk and blend thoroughly to make a batter.

Distribute the batter evenly in each muffin compartment.

Bake for 10-12 minutes (depending on oven type).  Remove and allow to cool.

Place the butter in the saucepan at a moderate heat – taking care not to burn – when fully melted add in the grated Parmesan, stirring frequently to avoid clotting.

Place the scones on a platter or serving bowl and drizzle the melted butter & cheese sauce.  Best served warm and fresh.
