Friday Night Feature Dish – Saku Tuna

The new spring menu in The Jabiru Restaurant offers a variety of fresh and light dishes reflective of the new season. One dish that truly captures this is the Saku Tuna. Our chefs take hand-cut yellow fin tuna and lightly season it with a creamy sesame dressing. The pickled green paw paw and pink pickled ginger not only provide a beautiful pop of colour to the dish, they also add a sweet and sour complexity of flavours that truly excite the tastebuds. Served with a fresh diced avocado salsa and finished with a dill yoghurt, this dish offers all the very best of a springtime menu. Saku Tuna is available each Friday evening in The Jabiru Restaurant from the new spring menu.
